Pushing the boundaries of toddler cuisine

My son ate spinach tonight. Yeah that's right. He ate it and he loved it. Okay, he didn't actually know he was eating it. I totally pulled a fast one on him. But he still ate it!  Thanks to those fantastic people over at parenting.com who slave for hours over a hot stove to come up with all these tasty recipes, I was able to get the green leafy veggie into the kiddo without him even knowing it.

So, last week a little note popped up in my email from my friends over at parenting.com (I don't actually know anyone over at parenting.com, but they do send me emails all the time, so I'm thinking they want to be friends right?). The subject of the email was "65 Funny Food Recipes for Kids".  65! There just had to be at least 1 out of the 65 that the picky little kiddo would eat. And they were "funny". What kiddo doesn't love funny?

Then I noticed a link that said; "Two-Way Dinners - Make it for kids, then tweak it for adults -- and everybody's happy!" - Just what I needed a way to make everyone happy.

The recipe that caught my eye was the Chicken Nuggets/ Chicken Croquettes.  Since the adult version actually sounded pretty good with the cheese and the spinach, I decided not to do the two different versions and push the boundaries of toddler cuisine.  I was also running a tad bit behind schedule and didn't have the time to bake them, so I actually browned them up in a pan with a little olive oil.





Not only did the little man eat the green-colored chicken hunks, he devoured them! And who wouldn't love a crispy, cheesy chicken nugget...that just happened to have a little spinach in it?

Next time I might try them a little differently with a feta cheese instead of the cheddar and a sweet cranberry sauce drizzle. Yum.

Thanks again to my BFF's at parenting.com for getting my veggie-free toddler to eat spinach.

He looks mad. Maybe he figured out I tricked him! HA!

  2. Congrats! And I beg of you, please don't start cooking one thing for the child and a different thing for yourselves. TRUST me, it doesn't seem like much trouble right now....but as your life gets busier, you might grow to hate the notion that you're cooking TWO meals instead of one.

  3. Congrats! Here are my tricks ;-) I use my mini food processor and chop up spinach then add to ricotta cheese for stuffed shells. Last night I processed spinach, carrots, and mushrooms and then added to the sauce I use for baked ziti. Worked like a charm!!!! It feels so good to know that they eat veggies and don't even know! Great post!

  4. I think you just managed to accomplish one of those amazing feats as a mother. Getting your kids to get healthy without them knowing is truly an accomplishment. Well done!

  5. Mama cas - You know, we never do. The little man pretty much eats what we eat (which keeps us eating better!) and if he doesn't like certain things, then he just eats "around" them!

  8. Who am I kidding, I need my spinach hidden as well. Your comment about writing posts in the shower made me laugh. That's where i write too, but I didn't want to admit it. I was a little shy about the picture I was conjuring. I've fleetingly considered a dictaphone since all my best posts seem vanish into thin air once I'm able to sit at the computer, but I figured that would be to over the top : )

  9. Love new ideas of how to hide veggies in kids food. My son - I got lucky - loves veggies... my toddler on the other hand- Im learning is going to be my picky eater.

    BTW your son is too adorable! He looks like you!
